Mom’s Hungry Kitchen Orecchiette con Rapini e Salsiccia recipe. Simple. Bold. Southern Italian comfort. 🇮🇹

Ingredients:
• 1 lb Barilla orecchiette
• 1 lb Italian sausage no casing, add 1 tablespoon of fennel seed
• 1 bunch rapini
• 6 cloves garlic, chopped
• Red pepper flakes
• Salt & pepper
• Extra virgin olive oil (Trader Joe’s Sicilian 👌🏼)
• Freshly grated Parmigiano

Directions:

1️⃣ Blanch the rapini in boiling water for 3 minutes. Remove and set aside.

2️⃣ In the same water, add salt and cook the orecchiette until al dente.

3️⃣ While pasta cooks, brown the sausage in olive oil. Remove and set aside.

4️⃣ In the same pan, sauté garlic in olive oil, on low for 30 seconds, then add red pepper flakes to bloom in the oil.

5️⃣ Add the sausage and rapini back to the pan. Add 3 ladles of pasta water when the pasta is done cooking.

6️⃣ Add the drained pasta. Toss well and cook 2–3 minutes.
Season with salt, black pepper, and another drizzle of olive oil.

7️⃣ Finish with freshly grated Parmigiano Reggiano and serve.
