The concept of French boudin continues to baffle me as an American. The reason being, we have boudin too. But it's a cajun dish. Still a sausage, but it's pre-cooked fillings bulked out with a lot of day old rice. I'm absolutely willing to believe the OG French version is delicious, I'm just wondering how the world the French Canadians that came down here in the 1800s managed to it into what we have now. Food history is a hell of a thing, huh?
