Ingredients (serves 4):
3 tablespoons butter (40 g)
Nutmeg, to taste
Salt, to taste
Black pepper, to taste
⅔ cup all-purpose flour (80 g)
1 cup whole milk (250 ml)
1 cup Gruyère cheese, grated (100 g)
2 cups Parmesan cheese, grated (200 g)
3 eggs
Instructions:
Generously butter the ramekins, coating the entire surface. (No flour or other coating is needed.)
Prepare the béchamel: melt the butter with salt, pepper, and nutmeg. Add the flour and stir well. Gradually add the warm milk and bring to a boil. The mixture will become very thick—this is normal. Turn off the heat, add the cheeses, and stir until fully combined. Let it cool slightly, then add the egg yolks one at a time (add two first, then the last one at the end). Let the mixture cool completely.
Beat the egg whites until softly whipped (soft peaks). Gently fold a portion of the béchamel and cheese mixture into the egg whites. Then add the remaining mixture and fold carefully from the bottom up until fully incorporated.
Pour the mixture into the prepared ramekins and sprinkle with a little grated Parmesan.
Bake in a preheated conventional oven at 325°F (160°C) for 10 minutes. Then switch to convection mode at 325°F (160°C) and bake for another 10 minutes without opening the oven. Increase the temperature to 400°F (200°C) and bake for an additional 10 minutes.
When done, turn off the oven and let the soufflé rest inside for 2 minutes. Serve immediately.
