The Best Italian Maritozzo Recipe ☕🇮🇹
Soft brioche buns filled with a cloud of vanilla cream.
Ingredients (Makes 8-9 units):
For the dough:
• 300g All-purpose flour
• 7g Dry yeast (approx. 2 tsp)
• 50g Sugar (approx. 3 tbsp)
• 100ml Warm milk
• 1 Large egg + 1 Egg yolk
• 60g Softened butter
• 1 tsp Vanilla extract
For the Vanilla Cream filling:
• 300ml Heavy whipping cream (38% fat), very cold
• 35g Powdered sugar (approx. 3 tbsp)
• 25g Instant vanilla pudding mix (approx. 2.5 tbsp)
• 1 tsp Vanilla extract
Instructions:
In a mixer bowl, combine warm milk, yeast, sugar, and the egg + yolk. Add flour and vanilla extract. Knead for a few minutes, then add the softened butter. Knead for 7-10 more minutes until the dough is soft, smooth, and elastic.
Transfer the dough to a bowl, cover, and let it rise for 1.5 – 2 hours.
Divide the dough into equal pieces and roll them into smooth, tight balls. Place on a baking tray with parchment paper, cover, and let them rise for another 1 hour until they are airy and light.
Preheat your oven to 170°C (340°F). Brush the buns with egg wash and bake for about 20 minutes until golden brown. Let them cool completely before filling.
Whip the cold heavy cream in a mixer until stable. Add powdered sugar, pudding mix, and vanilla, and whip on high speed until you have a firm, thick cream.
Cut each bun down the middle (leave the bottom attached), fill generously with cream, and use a spatula to smooth the edges for that perfect look. Dust with powdered sugar and enjoy!😊
