Creamy tomato and spinach pasta
Ingredients
8oz spaghetti
1 tbsp olive oil
1 tbsp butter
3 garlic cloves, sliced
1 yellow onion finely chopped
1 cup cherry tomatoes, halved
1 cup spinach
2 tbsp tomato paste
1/2 cup chicken or vegetable stock
1 tbsp lemon juice
1 cup cream
3/4 cup grated Parmesan cheese
1 tbsp chopped parsley
Salt and pepper to taste
1 tsp red chilli peppers
Boil the pasta according to package instructions .
In a pan heat oil and butter. Once the oil is hot add the garlic sauté for 30 seconds, then add onions and sauté for 1 minute.
Then add your tomato paste and tomatoes and cook for another few minutes.
Now add your stock and squeeze in the lemon juice.
Let the mixture simmer for 3 minutes.
Now add cream and cook on medium low heat until it starts to thicken.
Now add the spinach and cook for a minute.
Finally lower the heat and add Parmesan cheese and mix well, then adjust the seasoning.
Add cooked pasta mix well and garnish with fresh herbs and chilli peppers.
