

I'm struggling with getting my crust to consistantly rise.
It could be crappy dough though. Work at Whole Foods. Frozen dough made by company Crest Hill. Sometimes it looks like 1st photo. Sometimes looks like 2nd.
Is there a reason for this? We are using electric ovens. My goal is 1st photo.

Probably impossible to tell since you’re using frozen dough. Are you bringing it to room temp before baking? Ideally you would just make your own dough so you can control all the variables and adjust as needed. It’s not too difficult. Look for NY style recipes for a home oven (500-550° F temp).
