Sun dried tomatoes oh my God no no no lol I'm surprised you didn't slap the guy when he said to put them in the soup. Where is the fat trimmings from the prosciutto? Render down the prosciutto trimmings and use that flavor to cook the sofrito. Ditch those sun dried tomatoes for christ sakes.
My family makes this but very different! Just olive oil, hot peppers, crushed tomatoes, oregano, cannellini beans, and conchigliette pasta. They are from Basilicata

Looks delicious but I think it'D be better off without sun-dried tomatoes.
Their flavour could b too strong and somehow cover a little the king of the dish…the beans.
