I swapped lasagna noodles for cheese tortellini and everyone loved it!!
One pot lasagna recipe(with tortellini):
1-2 lbs cooked ground beef( I usually do 2 and sometimes 3, because I have teen boys)
1 jar of marinara sauce( the rosemary @yomamasfoods is 👏🏼)
1 cup of onion chopped finely
1 14-oz. can diced tomatoes(for extra spice use fire roasted with green chiles!)
1 32-oz. container beef or chicken bone broth(regular broth works too)
1 spoonful of chopped or minced garlic
1 tsp onion powder
1 tsp garlic powder
1 tsp italian seasoning
Salt and pepper(I eye ball it)
1 tsp cajun seasoning( a 1/4 tsp if you do not like spicy)
Optional – sprinkle of chili flakes
16oz heavy cream
4-5 cups of tortellini or 10-12 lasagna noodles broken into pieces
Optional toppings
* Ricotta cheese
* Parmesan cheese or mozzarella
Directions
1. Sauté the onions and garlic in olive oil or butter
2. Cook beef, drain any grease
3. Add in your marinara sauce, diced tomatoes, broth & seasonings.
4. Stir and cook on medium for 1 hour
5. Add in your heavy cream and lasagna noodles or tortellini
6. Cook for an additional 30 minutes on high or until tortellini is ready.
7. Pour in a bowl and top with your favorite cheese (I love ricotta or freshly grated Parmesan!)
Notes:
** Stir every few minutes. If you’re using a regular pot instead of a Dutch oven, lower the heat and stir more frequently. The noodles can cook faster in a standard pot, and you want to prevent them from sticking or burning!
**If you want to use a crockpot, cook 3-4 hours on high (cook the meat before placing in the crockpot) and then add the lasagna noodles and heavy cream and cover on high for another 30 minutes.
