Looking for a quick, comforting meal? This Soupy Pressure Cooker Pasta is ready in just 20 minutes! It’s packed with veggies and features a unique besan (gram flour) slurry that makes the broth extra creamy and delicious. Perfect for busy weeknights or a cozy lunch.
Ingredients:
Oil: 1 tbsp
Onion: 1 medium (chopped)
Veggies (Finely Chopped): 1 Carrot, 1 Capiscum, 1 Tomato
Ginger Garlic Paste: 1 tbsp
Spices: 1 tsp Salt, 1 tsp Turmeric powder, 1 tsp Chilly powder, 1 tsp Vegetable masala
Pasta: 1 cup macaroni
Water: 1 ½ cups
Besan Slurry: 1 tbsp Besan mixed with water into a smooth paste
Garnish: Fresh coriander leaves & Lemon
Step-by-Step Instructions:
Sauté Aromatics: Heat 1 tbsp oil in a pressure cooker. Add the medium onion and sauté until translucent.
Add Veggies: Stir in the finely chopped carrot, capsicum, and tomato. Add 1 tbsp ginger-garlic paste and sauté.
Season: Add salt, turmeric powder, chili powder, and vegetable masala. Sauté everything together for about 2 minutes.
Boil Water: Pour in 1 ½ cups of water for every 1 cup of pasta. Bring the water to a boil.
Add Pasta & Slurry: Once boiling, add 1 cup of pasta. Pour in the smooth besan slurry and a handful of fresh coriander leaves.
Pressure Cook: Close the lid and cook for 2 whistles.
Serve: Let the pressure release naturally. Serve hot with a squeeze of lemon!
