For the salmon:
1 1/2 lb salmon filet
Salt & pepper to taste

For the crust:
1 tbsp olive oil
2 oz crumbled feta
1/2 cup crushed pistachios
1/4 cup finely chopped fresh parsley
1/4 cup finely chopped fresh dill
1/3 cup finely chopped sun dried tomatoes
2 tbsp chopped capers
1 tbsp balsamic vinegar
1 tbsp honey
Zest 1/2 lemon
1/4 tsp salt
Pepper to taste

1️⃣Preheat the oven to 275. Line a sheet pan with parchment paper. 2️⃣ Make the crust. Add the olive oil, pistachios, dill, parsley, lemon zest, feta, capers, sun dried tomatoes, salt and pepper to a bowl. Add the balsamic and honey then toss to combine. Place the salmon onto the sheet pan, season with salt and pepper and add the crust to the top. Spread it evenly over the top of the salmon. Drizzle the salmon with olive oil and honey. Place the salmon in the oven for 30-35 minutes. 5️⃣Plate the salmon and enjoy.
