SHEET PAN GNOCCHI WITH BOURSIN, CHICKEN AND MUSHROOMS
Serves 4
.
INGREDIENTS:
– 1 (1-lb) package gnocchi
– 8 oz mushrooms, sliced
– 1 lb chicken breasts, cubed
– 3 cloves garlic, minced
– 1/2 tsp dried thyme
– 2 Tbsp olive oil
– 1 (5.3-oz) round Boursin cheese (I used the garlic & herb flavor)
– 2-3 handfuls baby spinach
– Juice of 1/2 lemon
– 1 Tbsp heavy cream
– Kosher salt and black pepper
– Parmesan cheese, for serving

INSTRUCTIONS:
1) Preheat oven to 425F.
2) On a large, parchment-lined baking sheet, toss together the gnocchi, mushrooms, chicken, garlic, thyme, olive oil, and generous pinches of salt and pepper. Clear a small area in the center of the pan, then place the Boursin round in it.
3) Bake for 25-30 minutes, or until gnocchi is golden-brown and chicken is cooked through.
4) Immediately after removing from the oven, add the spinach and stir until wilted. Stir in the lemon juice and heavy cream.
5) Serve topped with shredded Parmesan cheese if desired.

  6. Ah I love that! I have a gnocchi bake that is similar but uses Italian sausage and red sauce. All other ingredients are the same lol

I made this tonight for dinner and it was fabulous!! the spinach took a while to wilt while stirring it in so I actually put it back in the oven to use the residual heat to speed up that process. I diced a tomato in there too but I think next time I'll use sundried tomatoes like someone else suggested 😊 and I might season the chicken separately too to get more flavor. definitely going in my dinner rotation!
