This is a one-pan meal of branzino with baby potatoes, zucchini, red onions, and tomatoes, seasoned with fresh thyme and parsley. If you don’t have branzino, you could use cod or salmon. This meal is quick to prepare and is a hit in our family. Let me know if you plan to try out this recipe!
Ingredients:
2 mediterranean branzino fish, cleaned
3 (350g) organic zucchini, chopped
10 (300g) organic baby potatoes, chopped
1 pack (340g) bites sized tomatoes
6 tbsp olive oil, divided
2 organic unwaxed lemons
4 sprigs of fresh thyme
2 tbsp of garlic powder
salt and pepper to taste
parsley for garnish.
Method:
-Preheat the oven to 400°F. Place one rack in the middle of the oven and one about 6 inches from the heating element.
-Put the branzino on baking sheet and rub it inside and out with 2 tablespoons of the oil.
-Slice one of the lemons and stuff both fish with the lemon slices.
-Chop both zucchini and potatoes and place them into a bowl and then season with salt and pepper. Sprinkle fish inside and out with the salt and pepper too.
-Now add the tomatoes, zucchini and potatoes onto baking sheet with fish. Add remaining olive oil to the fish and veggies.
-Bake on the middle rack until almost cooked through, 18 to 20 minutes.
-When the branzino is almost cooked through, turn on the broiler and cook until crisped for 5 minutes or so.
-Squeeze the juice from the leftover lemon over the fish and garnish with parsley and enjoy!
