I will be hosting a pizza party this weekend and I am making about 30 pizzas for the guest. Has anyone ever tried experimenting, mixing bread flour and 00 flour? I will be using a Polish method, but does this sound like a good idea?
Either alone makes a great pizza. No reason to think the mix wouldn’t also.

I did so in order to use my Gozney Arc XL at about 700°F but not burn the crust. It was chewy and light and turned out perfect!

I recently tried this exact same thing, but I found my crust to be somewhat chewy, and once it cools down, harder to chew. I’m at home oven at 550°. Any reason why it would be too chewy/hard?
