When you want risotto but don’t want to stand over the stove stirring forever! I love making this simple butternut squash puree and you can also use it as a base for a pasta sauce or a yummy soup, it’s so good! I added lobster to bring this up a level for a celebratory dinner, but you can also just make the risotto on it’s own. Rough recipe below, adapted from Ina Garten’s baked risotto recipe 😋

Baked Butternut Squash Risotto with Lobster
1 large butternut squash
2 tbsp olive oil
1 cup arborio rice
4 cups chicken stock, divided
1/4 cup heavy cream
1 cup parmesan cheese
2 tbsp water
4 tbsp butter
1 lb lobster
2 tbsp parsley

Butternut squash risotto: Cube about 2 cups of squash and leave the rest whole. Cover in olive oil and roast 400°F for ~45 minutes. Reduce oven to 350°F, add arborio rice and 3 cups of chicken stock to a Dutch oven and bake covered for 45 minutes. Purée the whole squash with a 1/2 cup of stock and heavy cream (I eyeballed the puree so add more liquid if needed). When the rice comes out of the oven, add remaining stock as need and stir vigorously for a few minutes to activate the starches in the rice. Pour in the butternut squash puree, add the cubed butternut squash and Parmesan. For the lobster: Melt butter with a few tablespoons of water over medium heat and gently poach lobster, flipping every 2 minutes, until opaque (6–8 minutes). Top risotto with lobster and parsley.

  1. That's impressive. Genuinely, none of those steps are easy even with baking experience.

    That being said Salmon is better for protein content so I'm good.

  2. Love this meal. Super indulgent without actually being over the top. I cant taste the comfort in this. The only thing I'll suggest is toasting the risotto first before you add the broth. It helps the final texture and will add a nuttiness that will pair really well with the butternut squash flavor. ❤
