Italian Sausage White Bean Soup
Ingredients
• 1 lb Italian sausage (mild or spicy)
• 1 tbsp olive oil (if needed)
• 1 onion, diced
• 3–4 carrots, chopped
• 3–4 garlic cloves, minced
• 1 tsp Italian seasoning
• ½ tsp red pepper flakes (optional)
• 2 cans white beans (cannellini or great northern), drained & rinsed
• 6 cups chicken broth
• Salt & pepper to taste
• 3–4 cups fresh spinach
• Optional: splash of lemon juice or Parmesan for serving

How to Make It
1. Brown the sausage
In a large pot or Dutch oven:
• Brown sausage over medium heat
• Break it up into small pieces
• Once cooked, remove and set aside
2. Sauté the veggies
In the same pot (add olive oil if needed):
• Add carrots and cook 3–4 minutes
• Add onion and cook 3 more minutes
• Add garlic, Italian seasoning, red pepper flakes — cook 30 seconds
3. Build the soup
• Add white beans
• Pour in chicken broth
• Bring to a simmer
4. Add sausage back
• Return sausage to the pot
• Simmer 15–20 minutes until carrots are tender
5. Finish with spinach
• Stir in spinach
• Cook 1–2 minutes until wilted
• Taste and adjust salt & pepper
