Greek Inspired Chicken Pasta Salad
This is one of my favourite things to make at the minute. Literally takes 15 minutes, incredibly nutritionally balanced, so delicious and keeps in the fridge for uk to three days.

Ingredients
– 1/2 cucumber
– 1/2 red onion
– 100g feta
– 180g dry pasta @garofalopastauk
– 200g cherry tomatoes
– Small bunch Mint, finely chopped
– Small bunch dill, finely chopped
– 2 chicken breasts, shredded
– Handful of olives, chopped
– 1 tbsp whole grain mustard
– 1 tbsp honey @rowsehoneyuk
– Squeeze of lemon
– Salt and pepper
Method
Cooked the pasta in salted water as per packet instructions.
Slice the cucumber in half length weighs and remove the seeds and discard. Slice again vertically so you have four quarters and then slice.
Cut the cherry tomatoes in quarters thinly sliced onion.
Once the pasta is cooked, rinse with cold water to cool and fully drain. Add to a large bowl with the the rest of the Ingredients, season well with salt and pepper and mix.
Serve with toasted seeds, extra crumbled feta, dill and a drizzle of extra virgin olive oil.
