A good baked Ziti is hard to pass up, especially with the variety of ways that it can be perfectly customized to your palette. Cream sauces, braised chicken, different cheeses, herbs (dried or fresh), Red sauces, Pesto, roasted vegetables, and beyond. The sky is the limit with a really good Ziti. Ingredients:
1lb rigatoni
1/2 lb ground Italian sausage
1 cup mozzarella, grated (mine was blended)
3/4 cup ricotta
2 tbsp dried oregano
1 can whole tomatoes, San Marzano preferred
1 tsp sugar
3 tbsp olive oil
2 tbsp minced garlic
1/4 cup finely chopped white/yellow onion
salt and pepper to taste
