




I made this Marry Me Chicken Pasta recently and it turned out incredibly creamy, comforting, and full of flavor. Tender chicken, a rich Parmesan cream sauce, and sun-dried tomatoes come together in one skillet and itโs honestly hard to stop eating it.
It looks fancy, but itโs very doable on a weeknight and doesnโt require anything complicated. Sharing in case anyone is looking for a cozy pasta dinner idea.
Ingredients
- 2 large chicken breasts, sliced into cutlets
- Salt & black pepper
- 2 tbsp olive oil
- 2 tbsp butter
- 1 small onion, finely chopped
- 4 garlic cloves, minced
- 3 tbsp tomato paste
- ยผ cup white wine
- 1 cup chicken stock
- 1ยผ cups heavy cream
- โ cup sun-dried tomatoes, chopped
- 1 tsp dried oregano
- Zest of 1 lemon
- 1 tbsp lemon juice
- 5 fresh basil leaves, sliced
- 12 oz penne pasta
- ยผ cup reserved pasta water
- ยฝ cup grated Parmesan
Instructions
- Season chicken with salt and pepper. Add to a cold skillet with olive oil, then heat to medium-high and sear until golden. Flip, cook through, and set aside.
- In the same pan, melt butter. Add onion and garlic and cook until soft.
- Stir in tomato paste and cook until slightly caramelized.
- Deglaze with white wine and simmer briefly. Add chicken stock and cream.
- Stir in sun-dried tomatoes, oregano, lemon zest, lemon juice, and basil. Simmer until creamy.
- Return chicken to the sauce and keep warm.
- Cook pasta until al dente, reserving some pasta water.
- Remove chicken, add pasta to the sauce, loosen with pasta water, and stir in Parmesan.
- Slice chicken and serve over the pasta.
