it's a running joke that I always forget some kind of ingredient, and yesterday was no exception. I had toasted up some peppercorns, and ground them up with my pestle and mortar to top the carbonara, and of course forgot to put it on before serving 🫠

    Well if that’s a first attempt then gz.

    Only thing that could slightly be improved imo is it the sauce looks a bit to thin. To help with that after combining pasta and other ingredients you can put them in a metal bowl and put this on top of the water pot. With the heat from cooking water you’ll cook the sauce a bit but you won’t scramble the eggs.

    Looks good, try using Guanciale( cheek part) instead of pancetta.

    If my carbonara or cacio e pepe sauce ends up too thin, I sprinkle in some toasted breadcrumbs. Thickens it up without compromising the flavor.

    I’ve used both homemade and panko, and while both are good, I personally prefer ones made from a finely ground baguette or a similar kind of crusty non-sourdough white bread. I grind the bread in the food processor and store it in a bag in the freezer. Throw some in a skillet with some butter or olive oil and toast. It’s one of my favorite garnishes!

    And while I’m sure few Italians would add breadcrumbs to those particular dishes, dressing pasta with breadcrumbs is very traditional in parts of Italy.
