    Servings: 4
    ■ Ingredients:
    * 1 kg chicken breast ( 2.2 lbs )
    * 200 g mozzarella ( 7 oz )
    * 10 pieces sun-dried tomatoes
    * 4 tbsp pesto (adjust for stronger flavor)
    * Grated Parmesan -to taste
    * Olive oil
    * Salt & pepper- to taste
    * Chili flakes -to taste

    ■ Instructions:
    1. Preheat your oven to 180°C (350°F).
    2. Slice the chicken breast into thin cutlets. Season lightly with salt, pepper and chilli flakes.
    3. Heat a little olive oil in a pan over medium heat and sear the chicken slices for 1–2 minutes per side, just until lightly golden. Don’t cook them through completely, they’ll finish in the oven.
    4. Slice the sun-dried tomatoes into thin strips.
    5. In a baking dish, start layering: place a layer of chicken slices at the bottom. Spread a layer of pesto over the chicken, then top with mozzarella slices and sun-dried tomato strips. Sprinkle a little grated Parmesan.
    6. Add the second layer of chicken on top. Drizzle a touch of olive oil over the top and season with a pinch of salt and pepper.
    7. Bake in the preheated oven for 20 minutes, until the cheese is melted and the chicken is fully cooked, juicy, and flavorful.
    8. Remove from the oven and let it rest for a couple of minutes.
    9. Finish with fresh basil leaves and enjoy with a side of salad or roasted veggies.
