Pasta Carbonara – RECIPE

Prep Time: 20 mins
Cook Time: 25 mins
Complexity: Medium

Ingredients (4 people):
400gr / 14.1oz spaghetti
300gr guanciale (pork cheek)
2 egg, 1 yolk
Pecorino cheese
salt and pepper

Procedure:

1) Cut the guanciale (pork cheek) in stripes and gently fry them in a pan, without adding any oil;
2) In a bowl, start whisking 2 eggs and 1 yolk, slowly adding some Pecorino cheese and pepper as shown in the video;
3) When the pasta is very ‘al dente’, merge the spaghetti in the guanciale pan and let everything cook together for an additional couple of minutes;
4) Pass the pasta and guanciale into the bowl with the eggs – outside of the heat!
5) Manage consistency of the sauce through adding more Pecorino cheese and/or pasta boiling water. Keep mixing with the bowl on top of the pan where your water boiled;
6) Serve immediately, with a sprinkle of freshly cracked black pepper;
7) ENJOY!

ITALIAN FOOD BOSS SPECIAL TIP: Do not add any cream but use the pasta water to create the natural creaminess. Mix eggs and pasta out of the stove and serve immediately!
