Every time I see one of these it's so upsetting, cream and cheese go in the last. The heat will break the emulsification and will keep your sauce from sticking to your pasta. Cream goes in near the middle to end on low heat. And cheese goes in once the pasta comes off the heat, the residually heat from the pan and food is enough to melt the cheese. – chef
