This stovetop lasagna comes together in one pan with lasagna sheets, a tomato-spinach sauce, crumbled paneer, and lots of melted cheese. It’s cozy, comforting, and just right for a relaxed Christmas Eve meal 🎄☺️

Ingredients :
Olive Oil – 2 Tbsps
Onion – 1/2 no
Carrot – 1 no
Spinach – 1 Cup
Paneer – 100g
Milk – 1/2cup
Water-1/2cup
Salt & Pepper – to Taste
Tomato Purée – 200g
Salt & Pepper – to Taste
Sugar – A pinch
Garlic – 2 Cloves
Basil – 2 Tbsps
Chilli flakes – 1/2 Tsp
Oregano – 1/2 Tsp
Grated Mozzarella Cheese 1Cup
Lasagna Sheets – 8 to 10 nos

Process:
•In a heated pan add olive oil. Saute the onions and carrot for about 2mins.
•Add the chopped spinach along with garlic and let it cook for about a minute.
•Add chilli flakes, oregano and mix well.
•Add the tomatoe puree along with spoonful of water and let it cook.
•Crumble the paneer/ricotta into the mixture, cover and cook for 5mins.
•Add in the basil leaves. Adjust the seasoning by adding salt, pepper and sugar.
•Add milk and water and stir it nicely.
•Place the lasagna sheets on top of the mixture, cover and cook for 15-18mins
•Top it up with some cheese, cover and cook until the cheese melts
•Garnish it with some fresh basil leaves and serve hot
