​🍝 Creamy Kashmiri Chili White Pasta

​Ingredients
​The Base:
​Spaghetti: 1 portion (approx. 100g)
​Butter: 1-2 tablespoons
​Milk: 1 cup (add more if needed for consistency)
​Vegetables: 1 small onion (finely chopped), 3-4 cloves garlic (minced)
​Spices: Kashmiri Red Chilli Powder (for color and mild heat)
​The Garnish:
​Cheese (Process cheese or Mozzarella, grated)
​Oregano
​Black Pepper (crushed)
​Fresh Coriander (chopped)
​Instructions
​Step 1: Prepare the Pasta
​Boil a pot of water with a pinch of salt.
​Add the spaghetti and boil until it is slightly softened but not fully cooked (approx. 80% done).
​Drain the water and set the pasta aside.
​Step 2: Make the Sauce
​Turn on the heat (medium flame) and place a pan on the stove.
​Add the butter and let it melt.
​Add the chopped garlic and onion. Sauté for about 30 seconds until the onion becomes translucent (transparent).
​Sprinkle in the Kashmiri red chili powder and stir quickly to release the color.
​Pour in the milk and stir well for one minute. Note: The milk will take on a lovely pinkish-orange hue.
​Turn off the gas temporarily if the pasta isn’t ready, or lower the flame to the minimum.
​Step 3: Combine and Cook
​Add the boiled spaghetti directly into the milk sauce.
​Turn the heat back on to low-medium.
​Cook the pasta in the sauce for 3 to 4 minutes. The spaghetti will absorb the milk and the starch will help thicken the sauce slightly.
​Optional: Add a little cheese during this step to make the sauce thicker.
​Step 4: Garnish and Serve
​Turn off the heat.
​Top generously with grated cheese, oregano, black pepper, and fresh coriander.
​Serve immediately while hot and creamy!

​Garnish with cheese and herbs. Serve hot!
