  1. Personally, I don't want to give my email just to download a recipe. I understand why you ask for email addresses, but my email is bloated as it is, so… I will never make any of your recipes because I will not give you me email address. I'm sorry about this, because they look like fabulous cookies.

  2. I’d say that almond paste is also known as marzipan that can be found in any grocery store in the baking aisle.

  3. Maybe it's the angle at which you videotaped the cookies that you showed, but the cookies that you refrigerated look higher than the ones in front.

  4. For a stand mixer they probably just need to use the whip attachment rather than the paddle attachment. The whip attachment would incorporate more air into the egg whites than the paddle attachment. That’s why different attachments come with the stand mixer.

  5. I have to wonder if it wouldn’t produce a lighter, airier cookie to first pulverize the almond paste into the flour, add all other ingredients, then fold in whites last. I’ll try to get to this recipe soon (will have to find/order the almond paste first) and reply to myself the results, unless, of course, someone here who is a more experienced baker than I can already nix that idea😄 Thanks for the yummy-looking recipe!
