Is ratatouille now just onions and courgette?
Why Marco is such a great influence on chefs is because he explains WHY he does everything he does. In every recipe you will find "sweat off the onions", while he explains why we want to do that. Or why we want to cook things quickly, or slowly, or whatever. It's like learning the craft instead of studying for one test and then forgetting everything.
