The first question we would like to ask you is this: after your successful fortnightly experience as Director of Restaurants with Italian Food and Wine in Malaysia, and specifically in Kuala Lampur, what was the secret to successfully bringing Italian cuisine to a country where food and wine culture is dominated by large American-style chains?
Thank you for the Question, certainly a lot of passion and patience!
This is because it is necessary to explain the typical products, the wines, the Italian Food and Wine History, the choice of suppliers and the importation of the best Italian high quality raw materials to each customer!
I’ll give you an example: often some customers would even ask for Ketchup on their Spaghetti, or Pizza with Pineapple and Spicy Chilli to put on every dish!
OK, we think you were very clear and explicit! Now that you are back in Italy, what are your future plans, since you are not only a Restaurant Manager, but we know that you are also very good in the kitchen!
That’s a great question to answer: I certainly love being in contact with people, setting up the catering room correctly and coordinating the service staff, so to put it in a nutshell, the role of a Gastronome, but I also enjoy cooking. Preparing innovative and tasty dishes fills me with joy!
So, ultimately, to continue my experience as a Room Manager in a recognised Italian restaurant, but I do not exclude the possibility of opening my own restaurant in Italy in the future. Thank you for the interview and the space granted on Planet Wine & Co. Hi!
