š¹1/2 English cucumber, chopped
š¹1 green bell pepper, chopped
š¹10 ounces cherry tomatoes, halved
š¹1 to 2 shallots, chopped (or 1/3 to 1/2 cup chopped red onion)
š¹1 cup chopped fresh parsley
š¹2 tablespoons capers, drained and rinsed
š¹1/2 cup pitted Kalamata olives
š¹1/3 cup feta cheese, crumbled, more or less to your liking
For the Greek Salad Dressing
š¹1 lemon, zested and juiced
š¹1 tablespoon red wine vinegar
š¹2 garlic cloves, minced
š¹1 teaspoon dried oregano
š¹Kosher salt
š¹Black pepper
š¹Extra virgin olive oil

For Italian Pasta Salad

š¹12 ounces pasta (I like fusilli or rotini)
š¹1 pint cherry tomatoes, halved
š¹1 bell pepper (any color), cored and chopped
š¹1 shallot, chopped
š¹1 cup (6 ounces) marinated artichoke hearts
š¹1/4 cup pitted kalamata olives
š¹6 pepperoncini, chopped
š¹6 to 8 ounces salami, cut into bite-size pieces
š¹6 ounces mozzarella cheese, torn (or mozzarella cheese balls)
š¹1/2 packed cup chopped fresh parsley
š¹1/2 packed cup chopped fresh basil leaves
For the Dressing
š¹1/4 cup extra virgin olive oil
š¹2 tablespoons white wine vinegar
š¹2 garlic cloves, minced
š¹1 teaspoon dried oregano
š¹1/2 to 1 teaspoon crushed red pepper flakes

š¹1 zucchini, thinly sliced
š¹1 cup fresh corn kernels (from 1 large ear of corn)
š¹1/2 to 1 teaspoon Urfa Biber or chili flakes
š¹1 cup cherry tomatoes, halved
š¹1/2 cup shaved parmesan, plus more to your liking
For the Basil Vinaigrette
š¹2 cups packed fresh basil leaves
š¹1 medium shallot, roughly chopped
š¹1 large garlic clove
š¹1 lime, juiced
š¹2 tablespoons white wine vinegar
š¹Extra-virgin olive oil (about 1/2 cup)

Hi interesting will try your versions definitely, I make something similar that you might want to try. For the dressing I zest and juice a lemon, I add a equal amount of good olive oil and about 1 to 1 and 1/2 teaspoon of fresh ground black pepper and set mixture aside while in a food chopper or a Pestle and Mortar I blend a handfull of basil, 2 garlic cloves a small chilly and a few leaves Rosemary and mix well with oil mixture and let it rest while I boil the pasta 400g is the ratio I use for the dressing amount and I prefer fuscilli. Mix dressing with drained hot pasta pitted calamata olives, feta cheese and freshly grilled tuna flakes or sliced grilled chicken fillet mix well and enjoy
