šŸ”¹1 green bell pepper, chopped
šŸ”¹10 ounces cherry tomatoes, halved
šŸ”¹1 to 2 shallots, chopped (or 1/3 to 1/2 cup chopped red onion)
šŸ”¹1 cup chopped fresh parsley
šŸ”¹2 tablespoons capers, drained and rinsed
šŸ”¹1/2 cup pitted Kalamata olives
šŸ”¹1/3 cup feta cheese, crumbled, more or less to your liking
For the Greek Salad Dressing
šŸ”¹1 lemon, zested and juiced
šŸ”¹1 tablespoon red wine vinegar
šŸ”¹2 garlic cloves, minced
šŸ”¹1 teaspoon dried oregano
šŸ”¹Kosher salt
šŸ”¹Black pepper
šŸ”¹Extra virgin olive oil

For Italian Pasta Salad

šŸ”¹12 ounces pasta (I like fusilli or rotini)
šŸ”¹1 pint cherry tomatoes, halved
šŸ”¹1 bell pepper (any color), cored and chopped
šŸ”¹1 shallot, chopped
šŸ”¹1 cup (6 ounces) marinated artichoke hearts
šŸ”¹1/4 cup pitted kalamata olives
šŸ”¹6 pepperoncini, chopped
šŸ”¹6 to 8 ounces salami, cut into bite-size pieces
šŸ”¹6 ounces mozzarella cheese, torn (or mozzarella cheese balls)
šŸ”¹1/2 packed cup chopped fresh parsley
šŸ”¹1/2 packed cup chopped fresh basil leaves
For the Dressing

For the Summer Pasta Salad
šŸ”¹1/2 pound short pasta (like shells, rigatoni or bowtie)

šŸ”¹1 zucchini, thinly sliced
šŸ”¹1 cup fresh corn kernels (from 1 large ear of corn)
šŸ”¹1/2 to 1 teaspoon Urfa Biber or chili flakes
šŸ”¹1 cup cherry tomatoes, halved
šŸ”¹1/2 cup shaved parmesan, plus more to your liking
For the Basil Vinaigrette
šŸ”¹2 cups packed fresh basil leaves
šŸ”¹1 medium shallot, roughly chopped
šŸ”¹1 large garlic clove
šŸ”¹1 lime, juiced
šŸ”¹2 tablespoons white wine vinegar
šŸ”¹Extra-virgin olive oil (about 1/2 cup)

  4. Hi interesting will try your versions definitely, I make something similar that you might want to try. For the dressing I zest and juice a lemon, I add a equal amount of good olive oil and about 1 to 1 and 1/2 teaspoon of fresh ground black pepper and set mixture aside while in a food chopper or a Pestle and Mortar I blend a handfull of basil, 2 garlic cloves a small chilly and a few leaves Rosemary and mix well with oil mixture and let it rest while I boil the pasta 400g is the ratio I use for the dressing amount and I prefer fuscilli. Mix dressing with drained hot pasta pitted calamata olives, feta cheese and freshly grilled tuna flakes or sliced grilled chicken fillet mix well and enjoy
