  1. I realize onions are part of many recipes, but due to an allergy, that’s a no go for me. Garlic is fine. Can I make without onions and turn out?

  2. Is this something you could make in bulk and freeze for use later? If so, would you add the cream before the freezing or when you plan on using it?
    I might have missed it but what flavors does the Vodka bring to the dish?
    I'm amazed you chopped the Basil so early. It's usually one of those things you want to chop and add at the very end to prevent the oxidization.

  3. For ginger, freeze it with the skin on. To use it, chop off a piece the size you want and under cold running water, scrape the skin off with a spoon. Grate it still frozen on the microplane. This method keeps your ginger from spoiling and when you grate it frozen, you’re able to cut across the stringy bits. It comes out perfect. So easy.
