  3. Cutting into potatoes with a fork is the same as tearing bread, not slicing with a knife. It just tastes better.
    I wonder if Vidalia onions would work for the last salad.

  6. I can't believe you never had potato salad made with vinegar! You must have had a sheltered life in Maine. It was a common dish at church picnics I went to when I was young in Connecticut. We called it German potato salad, I'm not sure that's correct, but that'd what we called it.

  7. Our version from our place (Italy) is this.. boil potatoes, peel, cool, slice or chunk (neatly) olive oil salt pepper sliced red onion,
    celery leaves black olives carrot shavings pepper powder (paprika) and my dad liked it with the italian HOT powder.. mix gently. It NEVER lasted as leftovers and it was the staple at every summer gathering and looked forward to by all guests. i miss it and them.

  9. We frequently eat this dish in turkey . We put onions ( mostly green onions ) , some ground black pepper and not vinegar but lemon

  10. Love all of your shows. Would it be possible for you to mention some name of vinegars that are really good? Here in the US (New Hampshire) I am having a hard time finding one.

  12. When she said that the potatoes taste better when cut with a fork: I wonder if it has to do with all of those rugged edges absorb all of the oils and flavors better, then they do when they have the flat, smooth sides from being cut with a knife?

  13. My in-laws were from Calabria, we used string beans. Make it all the time. Harper, we add potatoes to our salad as well. Just had it last weekend at our beach house. A great additive!! Even a little red onion!! If they are from Tropea, that’s a bonus!!

  14. I didn't go through all the comments but in vermany there are several places where salads with potato and green salads are combined. Some are served by room temperature some slightly warmer. Then there are recipies with mayo – which I don't like, and there are recipies with broth, parsley and bacon which was fries in a pan with the onions before. This is the way my grandma used to make it. I love the variations with the thuna and anchovis. I will give them a try.

  16. My Calabrian family made Italian potato salad with potatoes, green beans, red onion, tomatoes, EVOO, red wine vinegar, oregano, salt and pepper.

  17. Harper, for Italians or Italian Americans, it's nothing. Our family makes the 1st one EXACTLY the same way (sometimes I mash an anchovy with the olive oil, it disappears), or sometimes we put string beans. When I was a kid and saw American potato salad with mayonnaise, I used to CRINGE! (still do!). I made the salad for Memorial Day, and I'm gonna make it for the 4th of July. 😊 (p.s- Viva Montalbano e Luca Zingaretti, e viva le orecchiette con salsiccia e cime di rape, un' altro dei suoi piatti preferiti!)
