I finally made sardine soup/stew.
I’m trying to eat more fish. Omega 3s and all that. I love the idea of canned fish. I like how the bones and the skin are usually still there, but don’t really affect the flavor or texture negatively. They don’t use very many preservatives, if any, because they are sterilized by the canning process. I have a few recipes for canned fish, but one I was hesitant to try was a kind of tomato-based fish soup/stew. I had looked up some other recipes for similar things, but what I ended up cooking is my spin on it. And it is… pretty good. I definitely haven’t perfected it, but I can see myself making this again. Recipe: 2 cans of sardines in oil 1/2 of a lemon About a cup of diced onion,s White win,e Tomato(I used canned peeled whole tomatoes and a bit of pasta sauce) Salt, pepper, and whatever spices you like I used oregano, basil, thyme, and smoked paprika. Some form of garlic(I only had granulated on hand) Granulated sugar Canned or frozen vegetables(I had a can of mixed vegetables that I wanted to use which had lima beans, carrots, peas, corn, and green beans), I cooked the onions in the oil of one of the cans, then added the veg, tomato, and the rest of the cans of sardines(oil included). I then added a few glugs of wine and the juice from the lemon. I added salt, pepper, spices, and sugar until it tasted right. I don’t expect this to be a crowd pleaser, but I like sardines, and if you do too, then I would recommend this soup.
