  1. Tomato paste does not have a raw flavour because it is not raw. It has had the shit cooked out of it in order to go from tomatoes to paste. It’s literally reduced tomatoes. The reason you add it and briefly cooked it is the same as for everything else – to develop and layer the flavour.

  2. Now I feel judged by chives whenever I pass them up in grocery stores. I need to put the work in to get good. I love my garlic chives because they're not as pretentious and make me feel bad about myself.

  6. It is interesting how different BAKING is from COOKING. And often, a chef is much better at one than the other although of course some chefs DO IT ALL : )
