Here’s the recipe:
INGREDIENTS:
2 lbs. beef stewing meat
1 can (14 oz) crushed or cubed tomatoes
4 cups beef broth, plus 1 cup red wine
1/2 cup fresh parsley (chopped)
4 carrots, sliced
4 potatoes, cubed
1 onion, chopped
12 oz egg noodles
10 oz frozen peas
DIRECTIONS:
In a pot, brown the beef; add onions, carrots, frozen peas, potatoes, parsley, cubed tomatoes, red wine, and broth. Simmer until the beef is tender (about 1.5 hours). Cook the egg noodles according to package instructions. Serve the stew over noodles with a green leaf salad on the side, topped with cucumbers and tomatoes.
