Today, I’m sharing a family recipe originating from the Campania region of Italy.

If you grew up Italian, you know this Escarole Stuffed Pizza recipe (aka pizza di scarola) was always served on Christmas Eve. My family and I enjoy this recipe throughout the year!

As is usually the case with Italian regional cuisine, every family has its own version. This is mine. I can’t help but feel grateful for the memories and traditions that have been passed down to me. I sincerely hope sharing this recipe enables you to create memorable moments with your loved ones.

Ingredients:

1½ pounds calzone dough homemade or store-bought
2 tablespoons olive oil extra virgin
1 medium onion diced
1-2 pinches of chili flakes optional
2-3 anchovies chopped
2 tablespoons capers chopped, rinsed and drained
½ cup olives chopped, pitted, black or green
1-2 cloves garlic minced or grated
2 heads escarole about 2 pounds, rinsed, chopped into ½-inch pieces, and blanched
olive oil for brushing dough, extra virgin
