Tiramisu

Ingredients:
    •    1 kg ladyfingers (savoiardi)
    •    16 oz mascarpone cheese
    •    3 large eggs
    •    6 tbsp sugar
    •    ½ cup unsweetened cocoa powder
    •    3 cups heavy cream
    •    2 cups espresso, room temperature
    •    1 tbsp vanilla extract

Instructions:
    1.    Whip the heavy cream with 2 tbsp of sugar until stiff peaks form. Set aside.
    2.    Separate the eggs. Beat the whites with 2 tbsp of sugar until firm peaks form.
    3.    In a separate bowl, mix the yolks with the remaining sugar, vanilla, and mascarpone until smooth.
    4.    Gently fold in the egg whites, followed by the whipped cream.
    5.    Dip ladyfingers quickly in espresso and layer with the mascarpone mixture in your dish. Repeat, ending with a layer of cream.
    6.    Chill overnight. Before serving, dust with cocoa powder or top with shaved chocolate.
    7.    Use extra cream mixture to secure ladyfingers around the outside and tie with a ribbon if desired.

  3. Beautiful! I always did this for many years but as I got older I stopped because the raw eggs kind of just turn me off. I know it's not authentic without but ….

Ciao
