GNOCCHI WITH CREAMY MUSHROOM & SPINACH SAUCE – TORTELLINO RECIPE
INGREDIENTS
250g homemade or store-bought gnocchi (frozen or fresh)
200g chestnut mushrooms, sliced
1 red onion, thinly sliced
150g fresh spinach (or a mix of fresh and frozen)
2 garlic cloves, minced
185g natural yogurt
80g Parmesan cheese (or more to taste)
1 tsp smoked paprika
Salt and pepper to taste
Olive oil for cooking
INSTRUCTIONS
Bring a pot of water to a boil, adding a pinch of salt. Add the gnocchi and cook until they float (about 4-5 minutes if frozen). Drain and set aside.
Heat olive oil in a pan on medium heat. Add the red onion and cook until soft.
Add the sliced mushrooms and cook until tender. Place the lid on to speed up cooking and retain moisture.
Add the minced garlic and spinach to the pan. Stir and cook for 2-3 minutes if using fresh spinach, or 3 minutes if using frozen. Stir in the natural yogurt, Parmesan cheese, smoked paprika, and season with salt and pepper.
Once the sauce thickens, add the cooked gnocchi to the pan. Stir to coat in the creamy sauce.
Serve the gnocchi, topping with extra Parmesan cheese and a sprinkle of paprika.

This looks like the perfect dish for a cold day. βΊοΈ
Like the yogurt substitute. Love every aspect of this dish. Intrigued that your gnocchi didnβt fall apart, after being frozen.
Not familiar with chestnut mushrooms. Going to Google them. Love mushrooms! Smoked paprika is something I love to experiment with. It was a pandemic era revelation to my life. Trying different paprikas is now an obsession.
It looks delicious. You have actually reminded me that I need to make gnocchi again using your recipe.
Thank you for mentioning mum, she loved the video and watches all your videos. Have a great weekend.
Made some cornbread today. Remembered some left over pepperoni in the freezer. Added some parmagna and yum! So good with coffee. Searched and turns out, it is a thing! That got me wondering if there is a polenta gnocchi? Searched and it is a thing too. Was polenta gnocchi a thing in Italy? Keep realizing that there is so much for me to learn.
Fantastic! I bought some mushrooms today. We're in sync!π
The yoghurt substitute is great! So good to be able to make a creamy sauce without cream
