Squid ink pasta REALLY shocked me. Recipe ⬇️

Recipe for pasta
– 2 cups 00 flour
– 3-4 eggs
– 1/2tbsp olive oil
– healthy pinch of salt
– 1 tbsp squid ink (aka cuddlefish ink)

In a large bowl add your flour and salt. Make a well in the center and crack in 3-4 eggs depending on their size. Add a little drizzle of olive oil and squid ink. Whisk the center to break up the eggs and start slowly widening your circles to bring in the flour. Get it fully incorporated before getting in with your hands. I recommend kneading as much as you can IN THE BOWL. Squid ink can stain your cutting board. Knead for 10-15 minutes until you have a smooth dough ball. Pretty dense and not sticky. Wrap in plastic wrap and refrigerate 2 hours.
Heavily flour your surface before dividing the dough ball into 2 pieces. Flatten with your hands and make sure flour is covering every part before laminating through pasta machine. Start at the widest setting and pass it through each and every one. Cut the sheets to the length you want your pasta. My pasta machine only has settings for fettuccine and angel hair but if yours is nice select the spaghetti cutter. Add another coat of flour to the sheets before passing through. You want every strand to have a coat of flour to prevent sticking. Boil in heavily salted water for 1-2 minutes.

Sauce recipe
– 4 garlic cloves thinly sliced
– 1 shallot minced
– 1/2 tbsp red pepper flakes
– 1/2 cup white wine
– 4-6 tbsp cold butter
– salt and optional pepper
– juice of 1 lemon
– 1 tsp squid ink

– saute shallots garlic and red pepper flakes before adding in white wine and lemon juice. Let the alcohol cool out and reduce the sauce by half cut the heat and whisk in 3 tbsp butter until emulsified. For a thicker sauce, repeat this last step. Add in your cooked pasta and toss to combine. Serve with an optional dusting of truffle salt and chopped parsley or basil. ENJOY!

Back when part 6 got animated i actually made Toni’s caprese salad using his recipe and a charcuterie board similar to the one Miata gave his stand for a watch party with the lads!
