INGREDIENTS:
* 12oz rigatoni pasta
* 3 tbsp olive oil, divided
* 1lb medium-large shrimp, cleaned
* 2½ tbsp Jamaican jerk seasoning, divided
* ¾ cup each green, red & yellow bell peppers, diced
* ½ tsp smoked paprika
* ¼ tsp black pepper
* ½ cup scallions (white parts), diced
* 1 scotch bonnet pepper (optional)
* 1 sprig fresh thyme (optional)
* 5 cloves garlic, minced
* ½ cup vegetable or shrimp stock
* 1 cup heavy cream
* ⅔ cup grated parmesan, plus more for serving
QUICK INSTRUCTIONS:
1. Cook pasta al dente, reserve ½ cup water
2. Sauté shrimp with jerk seasoning
3. Cook bell peppers, then add aromatics
4. Add cream, stock, seasoning
5. Combine with pasta and parmesan
