So in this video, I’m going to show you the easiest way to make this pizza in 50 hours, and explain why Dave Portnoy botched his pizza review of one of my favorite pizzerias. First, we start a 3-day process of making the dough.

Joes Pizza is my all time favourite pizza. It’s different than any other pizza Pourtnoy reviews. You won’t get a crush “crunch” or a strong undercarriage the way he likes. It’s not a DeLucia’s pizza because it’s not designed to be. You can compare the two. They are both 9.4’s in my book. I grew up on Joes.

My aunt was 100 percent Sicilian and she made pizza exactly the same way! Sometimes she would use Pecorino Romano and Parmesan instead of provolone. Great both ways. Keep that tradition alive!

Love the recipe, it really helps teach you the science behind a good pizza dough. As someone that prefers less dough and more toppings, I will use this method but make the dough thinner in the pan. Yours looks more like a faccacia bread with a little sauce and cheese. Please don't take this as an insult there are occasions where serving this would be great, I would have your version be the Italian bread for a pasta dish.

8.1 is an exceptional score for something that looks like it came from a Highschool cafeteria.
Portnoy’s 8.1 is a monster score for that NY style. And anyone who refers to his reviews for guidance knows this. Ask Joes how busy they have been since getting that 8.1. And the 7.9 for the Sicilian is another great score for Dave because Dave doesn’t like Sicilian. And to say his scores are arbitrary? They aren’t arbitrary; they are subjective. Just like if you reviewed pizza, we might not agree with your scores.
