I made this a couple of times and my mom loves it. Wish I had a bigger freezer for all of chef's recipes.
Chef, note that the recipe on your website lists vegetable stock twice.

Love minestrone soup. When my #1 son was little, he couldn't say minestrone, and called it "mr. pony" soup. We still eat it and laugh about his Mr. pony soup.

Great recipe. Made for my wife and mother in law last night. Skipped the green beans and added a some diced smoked turkey sausage that I sautéed at the end. None of us are vegetarian so the meat helped add some more hearty flavor. Keep up the great work and we will continue to tune in to watch you share your passion.

I didn't see the potatoes going in Chef. I made this wonderful recipe for your family and I left out the potatoes as we only have Maris Piper which breaks down and makes the broth cloudy. I will make it again when the Charlottes are back in the shop. I will also make sure I add the pesto. But Chef if you go into a supposedly Italian restaurant here in the UK you'll more likely be among Iranians and what do they know of Minestrone?

I have never used escarole but I use kale
In the written recipe it shows first 8-10 cups of vegetable stock and further down it says another 10 to 12cups, which one is it????????
If you are including the root vegetable. Vegetables like carrot are so hard onion would be chared before your carrot will even softened. So root vegetables first. Before onion

Minestrone is probably my favorite soup as well!
I really like to use kale when I make it. I know a lot of people dislike kale, but I find that when it's slightly soft, it adds a nice flavour.
