Ingredients for 1 serving:

Veal shank (about 4 cm thick)
Salt and black pepper to taste
All-purpose flour: 1/2 cup
Olive oil: 3 tbsp
Butter: 20 g
Small yellow onion: 1 (finely chopped)
Small carrot: 1 (finely chopped)
Celery stalk: 1 (finely chopped)
Garlic: 1 clove
Tomato paste: 1 tbsp
Canned tomatoes: 2 tbsp
Beef stock: 1 cup
White wine: 1 cup
Soy sauce: 1 tbsp
Fresh thyme sprigs: 2 or dried thyme
Chopped parsley: 1 tbsp (for garnish)
Lemon zest: 1 tsp
Garlic: 3 cloves
Water: 2 cups
Cornmeal: 1/2 cup
Butter: 15 g
Mascarpone: 1/8 cup
Salt and black pepper to taste
Olive oil: 5 tbsp
