In this On The Road Special Edition we visit Ristorante Il Centro di Priocca in the heart of Piedmont in northern Italy.

Today our host is sommelier Giampiero Cordero, whose grandparents opened the Michelin-starred restaurant in 1956. Giampiero is the third generation of his family to be involved in the family business: his mother is the chef while his father is the general manager of the restaurant, taking care of the front of house.

Giampiero discusses the location, origins and philosophy of the family business, with its focus on traditional local cuisine from the region, including “ravioli del plin” and the hand made “tajarin” (Tagliolini), also known locally as “Capelli degli angeli” (hair of the angels) because they are cut so finely.

Stevie also takes a tour of the restaurant’s historic wine cellar which has over 1600 labels from the region and beyond.
