In this video, discover ‘Spaghetti all’Assassina’— Italy’s most bizarre, fried pasta recipe!
This Italian pasta recipe comes from Bari, Puglia in Italy. It originated in the 1960’s.
The iconic way of cooking Spaghetti all’Assassina (Killer Spaghetti) requires that the spaghetti to be cooked entirely in a pan, so you’ll need a pan that can accomodate the pasta without the need of breaking it. In the video, we are using a 14” (36 cm) pan.
After frying the spaghetti, we cook it slowly like a risotto—adding a few ladles of hot tomato broth at a time.

INGREDIENTS (serves 4)
Spaghetti: 14 oz (400 g)
Tomato puree: 150 g
Tomato paste: 140 g (To make water bright red)
Water for broth: 5 cups (1 liter)
Garlic: 3 cloves (core removed); 2 whole and 1 minced
Olive oil: about 1/2 cup (150 ml)
Fresh red chili pepper: 1 minced or to taste
Fine salt: to taste
Sugar: if needed to correct an acidic tomato

I brown the noodles first in olive oil. I put my red sauce in the blender and add water.
Intresting in the 80's we called that fried spaghetti in the States on the EastCoast.
With no microwave, we would reheat leftover spaghetti in a pan with little butter and light brown suger or hot sauce of choice 😋

I tried this, since all the starch stays in the dish it is VERY rich, almost too much.
In Sicily pasta that is left from previous day is fried the same way,nice and crispy.

that pasta is really cinematic. You sit down to eat, and suddenly you’re in a culinary thriller—“Is it too spicy? Is it not spicy enough? Will I survive this meal?" You have to stick to the end to know it. It’s pasta with suspense!
I made this, but i cheated by preboiling the pasta, i also cheated the sauce with pasta marinara. I did add tomato paste to the pasta sauce and water and added it slowly as i charred my preboiled pasta. The pasta was preboiled because my pan wasn't big enough, and i didn't want to break the pasta. 😂 Then, once the prepwork was done, I made sure my pasta still had bite to it and began pan frying it. I slowly began adding the sauce. Only to forget THE SPICE! So very fast, i added in some habaneros into the sauce and took it to the blender. Finally, i began to continue adding my sauce until, like the video, the pasta was done cooking. It turned out amazing the char blended well with the tomato sauce, and the Spice was amazing too!
We call it Albanian pasta in Cleveland.

I made it and it was really delicious, I might have taken some creative liberties with the chilli peppers and added around triple what was needed. But it ended up really good and pretty spicy as well! Will definitely be making it again in the future!
The puree broth is a little bit sour than the tomato paste but I like it nonetheless
