I'm not an expert on Italian food but i love pasta.
For that dish i would use something like a Tagliatelle or Collezione pasta.
Never seen anyone twist the pot to stop pasta from sticking… just use a lot of water and a rolling boil!
Ramsey is a 'celebrity chef' and most people know him from the TV, where he swears anc insults cooks and owners. Ramsey has himself opened several restaurants that failed and many of the restaurants he 'advised' failed after his TV makeover. I wonder how many of Ramsey's fans have actually eaten in one of his restaurants AND eaten in the restaurants of other Michelin Starred chefs. Ramsey's early success says more about the UK food scene then it does about his skill as a chef. It is obvious that he has celebrity power but that doesn't make for great food. I don't See Thomas Keller, Heston Blumenthal, or Joël Robuchon spending more time on TV than in the kitchen. (btw I have eaten at Ramsey's in Vegas and NY. Not impressed) He's a manager and owner now, not a chef with lots of burger bars and fish and chips shops under his marque.

This isn’t an Italian dish. He’s using ingredients to make a dish that includes pasta. I love you Vincenzo but you need to accept that cooking goes beyond Italy. Gordon is definitely using French cooking techniques which includes reducing stock and adding cream like in many classic dishes….but yes….the “brushetta”….che cazzo……

Ironically, when Jamie Oliver was criticized by Uncle Roger for his Asian kitchen cooking and "not having a wok", Gordon picked him up in a instance. But when it comes Italian kitchen, where Jamie is more skilled, he does not even care to listen.

I always strive to learn authentic ways to crest the authentic dishes. But sometimes I don’t have those ingredients or time. So I’ll make a knock off. And it’s fine. I don’t call it REAL but it tastes good. And that’s what matters to me. I’m cinstantky mixing Chinese , Thai and Japanese ingredients into a generic stir fry. Nothing wrong with that
Unfortunately some people just need their foods and recipes dumbed down for consumption . I love food and try to learn the real ways to make authentic dishes. But let’s face it, there are more people in who are who are picky eaters and want middle of the road rubbish. Like the customers in the movie Big Night !!! 🤣🤣🤣🤣🤣🤣🤣🤣🤣

What i have learned about cooking Italian food is the technique and fresh ingredients.
Frozen ingredients will not work, unless it is vegetables.
And please please do not use the fake cheese!

You can modify the dish in a easy and healthy way .
In my culture , my grandmother and mum would spend all day on one dish .

At the very least, he did not even hint at calling this a "classic" recipe. Perhaps he has learned not to do that. It was the worst choice of pasta type to use though as this dish cries out for something smaller. Save the chicken stock is for risotto. Leeks are very mild flavored. It strikes me that this dish will be rather bland. More mushrooms (or more assertively flavored mushrooms)?

Are there any pasta dishes where you would traditionally use cream? Or is it a complete no-no?
The man doesn't run a kitchen, has never attended culinary school, and has never worked in a professional kitchen, yet calls himself a chef. I guess words don't have meaning anymore. His this guy is a chef, then Gordon's pasta with peas is carbonara.
No body should be listening and copying Gordon. I never understood why everyone loves this guy and thinks of him as a great chef.
He hasn't claimed this to be Italian, and didn't name it after any specific Italian dish. So I have little problem with this dish – although I do agree a different pasta form would have been better, and he did let the pasta die. But otherwise, I am interested in the actual mushroom sauce.
I normally agree with almost everything you say. But I feel you're reaching a little on this criticism.
Sauces made with stock and cream are pretty common in French cuisine. Sure, I agree that cream and stock are needless in the Italian style, but I don't think this is intended to be an Italian dish, nor should anyone view it as such.
It's from a series of short, quick recipes for home cooks, and not rooted in a particular cooking tradition.

And i wondered, are there any recipes where, rather than use salted water, you cook pasta in stock?
Does that exist?
If not, i wonder if it's a valid idea?
Vincenzo, you should have a collab with Metatron (Italian youtuber, he's Sicilian). His followers have been asking him to talk to you because he reacted to some Italian dishes videos that went really bad. I also think you would have a great time and make an awesome video.
