I’m something of a vegetable addict: I can’t get enough of my daily veggies. However, that wasn’t always the case! I used to hate vegetables.
That is, until Eva showed me the light. But you can’t go from Hot Pockets to steamed broccoli rabe all at once. That’s why today, Eva’s sharing some examples from a category of vegetable dishes that helped me in my journey. They’re delicious for everyone, whether you’re a veggie lover or hater.
They’re… STUFFED vegetables.

First we add some of this…and a little salt. Then we add this as well….and some salt. Don't forget to add the other thing…..and some salt. Salt, salt, salt, salt…..no.

Zucchini is amazing! You can stuff them with mashed potatoes and cheese, then bake them, you can slice them and fry them, you can blanch them and then sauté them in butter or olive oil 😋
Zucchine have no taste.

I know that tomato, pepper & zucchini are called vegetables, but they are actually fruit. & these are 3 of my favorite fruits (veggies). My maternal grandparents were Calabrese. & we loved zucchini. I've never had tomatoes or peppers stuffed the way you did. But growing up my Italian American Mom made stuffed peppers stuffed with a mixture including ground beef, cooked rice & Parmigiano or Pecorino cooked in a tomato sauce.
I agree about egg plants, but I prefer the long green egg plants I find in Thailand: the skin is thinner, softer and the taste too is softer.
Thailand has many varieties of egg plants, including small ones you eat raw.
I had trouble making the zucchini because they didn't have any grounda beefa at my market!😁😁🥒🥒🥒🥒
My mom stuffs bell peppers with minced meat and boils it in tomato sauce and it's absolutely delicious
Guys, I hate to tell you this, but there was not ONE vegetable (well, MAYBE, the herbs) in any of the dishes you cooked. Nope. Technically, all fruits. And, rice is a grain/seed. Sorry…

Zucchini in her vegetable soup. I make a lot of gazpacho in the summer because it’s always extremely hot & humid where we live. It’s just so refreshing Thanks for posting and glad to know your cookbook is available in Walmart!

The paprika's stuffed with aubergine and bread looks great. Wery Niza.
Zucchini: you can cut them in strokes Au Chinoise. Then blanche them shortly. Add other similar veggies and at the end you add 'cooked' Cous Cous. Now you can serve it warm or as a salat by adding a French dressing or vinagre/aceite.
The aubergine can be place on your stove in open flame. Keep turning until the aubergine is cooked. Then cut in half and scrape all out. Including the burn parts. Now you can add red unions, red wine vinegar, olive oil, pepper and salt. Serve cold as a spread on crispy bread toast.
What’s with grown men refusing vegetables? Several years ago I said to my nephew, You do not want to be a grown man going on a date and order chicken tenders and French fries! My aunt’s second husband is in his 70’s. She has to ‘hide’ vegetables in sauces for him as though he’s a toddler. Ridiculous.

La calotta for the tomato, in French it's la calotte. It is the little cap that the priest (or the pope) puts on his head 😀
To be honest, I've never NOT liked vegetables, 😂. Even as a small child, I would eat any veggies put in front of me, with the only exception being that Thanksgiving sweet potato casserole (it was too goopy and sweet! I did like baked sweet potatoes as a kid, though 😂).
But, these recipes look delicious and I'll add them to my "to make" list! For me, a meal isn't a real meal without some kind of vegetable dish! 😅💜🌶🫑🥒🧄🧅🫛🥦🍄🟫🫘🥕🥔

Too many American kids are subjected to overly boiled vegetables that have a mushy texture that is under salted and has no source of acid for seasoning. Of course people won't like vegetables if that is their only experience with vegetables.
When I started to learn to cook for myself I was amazed at how much better vegetables were when they were seasoned properly. It kinda makes me angry to know I had to suffer with bitter mush for so many years when I didn't need to. Mandatory cooking classes for every student would probably save the country a fortune due to the health benefits that could be gained.
