88 year old Rosanna is still inventing ways to dish up her family’s rice from their farm, Azienda Falchi, in Sardinia.

The two recipes include the following ingredients:
For 4 people,
– allow 300g of Artemide black rice (or Riso Venere, which they produce but sell to Riso Scotti), 2 courgettes, 1 lemon, 50g sliced smoked salmon, extra virgin olive oil, salt
– 300g Ermes or other red rice, one onion, 300g raw, shell-on prawns plus more for decoration if you want, 200ml white wine (or fino sherry or even Vernacchia di Oristano if you can get hold of it), one courgette, 2 tablespoons parsley, chopped, salt
These are starting points – feel free to embellish, substitute ingredients, but don’t let the salad become a dumping ground 🙂
