

Ingredients:
โข โ 200g spaghetti
โข โ 100g pancetta or guanciale
โข โ 2 large eggs
โข โ 50g Pecorino Romano, grated
โข โ 50g Parmesan, grated
โข โ Black pepper
โข โ Salt
โข โ 1 garlic clove (optional)
โข โ Fresh parsley (optional)
Instructions:
- โ Cook Pasta: Boil spaghetti in salted water until al dente.
- โ Cook Pancetta: Sautรฉ pancetta/guanciale (and optional garlic) in a skillet until crispy. Remove garlic if used.
- โ Mix Eggs and Cheese: Beat eggs and mix with both cheeses and black pepper.
- โ Combine: Drain pasta (reserve 1 cup water). Toss pasta with pancetta in skillet.
- โ Make Sauce: Off heat, quickly mix in egg and cheese mixture, adding pasta water as needed for a creamy consistency.
- โ Serve: Garnish with more cheese, pepper, and optional parsley. Serve immediately.
