
Tomorrow is my wife's birthday and we are throwing a pizza party at home. Iv hosted lots of pizza parties in the past but it's usually a lot of work and keeps me busy the entire night. My wife wants me to spend more time with her since its her birthday and doesnt want me busy the entire party making pizzas. Iv always made the pizzas fresh in the moment, but it takes so much time.
I would like to prebake the pizza crusts in the morning, but im not sure if I should add the sauce during the prebake or after?
I really want to maintain the quality of the dough/crust bc its peoples favorite part of my pizzas. I read that no sauce during the prebake would make the pizza crispier, which would give a different experience that my normal way. Saucing before the prebake would help retain its original texture, but im afraid the sauce will dry out and lose flavor. Could I do a thin layer of sauce first and then resauce it when I top the pizza later?
Also, Im not sure how long or what point I should be prebaking the crusts to?
I own a pizza oven that goes up to 350C (660f). My pizzas are big, usually 440g per doughball and takes about 4 minutes to cook. Halfway would be about 2 minutes, but the dough is usually still fairly doughy at that point.
Would appreciate some prebaking advice, thanks!
