Tonight’s menu, sausage and peppers: I’ve always preferred them cut up and with no sauce!
Preheat the pan, put some oil in, then render down the sausage about 15-20 mins on med/low heat. Take them off and turn up the heat a little. Add the onions and peppers (I chop the onions small and don’t add too much, I do it for flavor not a garnish). Then add some garlic and about 1/4 of chicken stock. Add red pepper flakes, oregano, red wine vinegar (tablespoon), salt and pepper, Cook a little more and then add the sausage back in. Cook another 15-20 on low heat. Toast the bread and butter it, add everything in your sandwich and garnish with fresh parm.
