Steel vs Bamboo peel

I’m still learning with my Solo Stove Pi Prime as well eel as dough making. My stove bundle came with a bamboo peel, which works, but in all of my YouTube learning, seems everyone uses a stainless steel peel.

Are they much better? Why?
